Ray 'B' here. I know you thought the idea of an old fashioned New England Clambake sounded good and we could hold it lakeside, right on The Sturbridge Host Hotel property. This Company, (New England Clambakes Company), looks to be a good option. Another option is a Traveling BBQ Company instead of the Clam Bake although the Clam Bake is more of a New England tradition.
