Bucket seats that fit -- there's the oem "bucket" seats, which are more 
like a fully split bench mounted on four rails.

Yes, pounding in part of the wheel well was the common way to do this, 
except for those folks that don't want to "damage" their trucks. Seems a 
good body man could repair any such "damage", if needed -- never had a 
problem with tire clearance running stock size tires and ride height.  I 
did it in the early 70's with some Asian import hi-back buckets (and 
matching 3-point seat belts) -- the original seat was missing. The only 
thing I swapped was left for right (seats) so the seat adjusters were on 
the inside edge.  That, and I mounted the passenger seat on the flat 
area, actually sort of offsetting the driver seat so it was centered on 
the steering column.

No, there are no off the shelf bucket seats that fit without some 
creative engineering on your part, or at least if anybody has found any, 
they are keeping quiet about it.  I suppose a good upholstery shop could 
help you out if you want to design/redesign a frame that fits.

The passenger seat being inset a bit never was a problem for us, except 
IF one had an FC passenger side armrest, it wouldn't get much wear 
except as a door closer.

Perhaps looking at some marine or RV seats where they often mount on a 
central pedestal  could be a diversion (looking for a very short 
pedestal - an excuse to buy a new band saw?), but automotive buckets are 
all designed with two outside rails, afaik.
