I have restored and then driven 3 Corvairs and always use the same mantra:... 
FIRST make it stop. Simply replace all the brake hardware from the MC to the drums and all cables and hoses. 
SECOND make it go. Replace all the rubber vacuum hoses and get fresh clean fuel into the carbs,&  get it running as well as it can.
THIRD make it look good. This is the part where you can make it as you want it to fit your personality. Once it looks right, then
FOURTH do the interior the way you want it to look!
