Yep, that sounds like an issue with the gauge itself.

The thermistors aren't cheap and easy to break off in the head from what I've heard. I'd check the wiring itself first, just in case it's a loose/shorting connection. If that's not it then the thermistor sounds more likely than the gauge, it appears that the circuit is sometimes open (200), sometimes connected (works), and sometimes shorting to ground (>600).
Jim Simpson may be doing some investigation of temp gauges at the show, if you'd like he can probably check your gauge.
