It means that the ham is at approx 73 degrees, which is too low a 
temperature for proper curing. To get a good golden brown and to make 
sure all the poisonous viruses are killed the preferred smoking temp is 
97 degrees, in which case the signature would be "97 plus". Avoid all 
hams that have a signature under 97 and consider even signatures of 120 
or better for added safety. But why ask this question now? Even if you 
boost the temperature it will be too late for Christmas - Or is this a 
New Year's ham?  Inquire!
