I'm in Seattle. Not so dry. :-)

In any case, I have found that a properly-plumbed system with drains and
takeoffs from the top side (plus filters) seem to work just fine.

Yes, but you are from the dry west where the air pipes don't carry water 
half the time!  Here in the east in summer it is common to get more 
water than air in industrial air lines. The amount of zinc inside 
galvanized pipe is slim, but every bit helps in keeping rust particles 
out of paint. Of course the filter should catch them! The galvanizing on 
the fittings also helps fill the pin holes so common on these offshore 
black iron fittings.
