The restoration shop that did my paint and body (Zero to 60 in Sherwood,
WI) had a very fair approach.  No money upfront with monthly bills for
the work performed during the preceding month.  Lots of digital pictures
documenting the work performed.  At the end (the car was in the shop
about 9 months), I ended up with a virtually paid-up job, a lot of
documentation, and a fantastic body and paint.
