I think if I do any further testing it will be in hot oil.  I can measure
the temperature easily enough and don't have to worry too much about fumes
or it being flammable as long as I don't get too carried away.  In any
case, I'm going to swap in one of the reproduction thermostats and see if
it opens a bit sooner (or stays open longer).
