Have you looked at the GM SAE papers from ~1960?  They document the car and
the testing they did including a lot of temperature measurements throughout
the head.  Admittedly that was for an 80 hp engine, but they did push it to
extremes during testing and the data show the temperature distribution in
the head.  There are also GM engine development papers that include the '63
turbo and '65 140 hp engine.  All of these are available from Clarks at
least.  Good place to start if you are trying to develop a new temperature
sensor either a gauge or snap switch.
