I see you haven't gotten any replies regarding your stalling issue, so
I'll give you some ideas. I've had this same problem on my 'vairs and
I believe it's due to an obstruction in the idle circuit of one of the
carbs. Here's what I do fix it.

First, with the engine warmed up and the car creeping along, I put the
shifter in Low and floor the accelerator. When the car's going around
35 mph, I quickly let up on the throttle. This creates a vacuum in the
carbs that "can" suck out obstructions in the idle circuit. I try this
a few times. If it's not successful, move on to...

Second, with the car parked and the shifter in Neutral, I remove the
air cleaners. I place my hand completely cover the opening of one of
the carbs with the palm of my hand. If the engine starts to die, then
that carb is okay and I move on to the other one. If that carb is the
one with the problem, there would be no change in the idle speed. Once
I've found which carb has the problem, I again block off the opening
with the palm of my hand, but now I rev the engine a few times. You
may feel gas on your hand, but that's to be expected. Rev the engine a
few times, and then, with the engine at a pretty good rpm, I quickly
pull my hand off. Hopefully, this does the trick. If not, move on
to...

Third, with the engine off, carefully tighten the idle mixture screw
counting and recroding the number of turns until it is snug in its
hole. Remove the screw completely and blow air into the hole. Replace
the screw by turning it all the way in and then backing it out the
pertinent number of turns.

Hopefully, one of these three processes will fix your problem. Let us
know how it goes.
