Good question.
I'd put the flat side against the barrel, as the top of the barrel is also
flat. The head may not be so flat, and the crush portion of the gasket will
contour to any 'out of flat' possibility. Just sayin'.

Guys,
A club member was asking about head gaskets.  It seems logical that the flat
part of the gasket should go against the head; but I'm not sure.  Can
anybody confirm?
