Found it!  I should have recalled the ultimate Corvair FAQ - the CORSA Tech Guide.  Page 10 of the Engine - Oil/Cooling section has a nice table.  They didn't test without doors, but did run a test without the lower shrouds, -24 deg cyl head temp @ 60 MPH.  Cooler oil too.
