Randy- I had experienced the very same bizarre behavior with my head temp gauge- not saying this is your problem, but I found that the white (?) wire that attaches to the thermistor had somehow started touching the head in a place on the wire where the insulation on the wire was broken- I think all I did to fix it was to re-route the thermistor wire so that it couldn't touch the head.
Check to be sure that wire is not touching anything besides where it connects to the head!
