As you may guess, us UltraVan owners are somewhat watchful of Cyl head 
temps. I have a spyder dash in our Ultra, with the boost gauge replaced with 
another Cyl head gauge. The heads have been aggressively cleaned of flash. 
The lower shrouds are removed, and replaced with a flat piece of sheet 
aluminum bridging the gap from the engine case to the exhaust manifolds, 
with the air exiting to the rear, and through the gap between the manifold 
and the cyl head. Our temps run from 300-325 on 75-80 deg days, with 375-400 
on 100+ days. Our rig grosses at 5800 lbs. We have traveled 25,000 miles 
back and forth across the country in the past three years with this setup. 
Highest we have ever seen it was a few minutes at 410.
    There is no substitute for proper preparation for the removal of heat.
     The "spikes" you are experiencing sounds like an electrical problem.
