[FC] oil temp

Good afternoon everyone.
 
 I have a question concerning oil temp.. On my 62 Greenbrier {corvair standard or any eng}with the V eng 80 HP which is running 102 heads, which is super around town.!!! I have installed A electronic sending unit on the right hand side of the block where the 1/4 tap plug was. The electronic gage in the cockpit is capable of reading from 100 degrees to 350 degrees. Here is my question.. What would be considered normal oil temp? What  would be the yellow zone,  and red zone drop dead shut me down time? I'm in the desert where temps range from 30 to 115 +. degrees. I'm running 30 or 40 W oil, and change every 2000 to 3000 miles. The oil cooler is folded fin, . Am I better off running a 12 plate?  How about a external cooler is that advisable? I always pull the lower shrouds off in April and put them back on when ever the wife says its getting cold!!!

Anybody have ideas?
