The carb studs... can they be removed but putting two of the hold down nuts on the threads and back them out?  Does the vacuum fitting on back of the carb base need be removed?

The vacuum fitting does Not need to be removed unless you Need it for a replacement head. 

The answer is Yes on the Carb Stud nuts...Sometimes. Use plenty of Penetrating Oil at the head, and if the double nut does not work, I sometimes used two vice grips opposite each other like a T to turn out the stud. 
A little heat never hurts also.

I was speaking with Bob Marshall yesterday, and he suggested that I contact you to see if you would be willing to let me host this month's meeting to enlist the help of the club with the head removal. Made some progress today on the topside.  I hope that once I get the shrouds and compartment seal off, which I want to replace, I will be able to access the last bolt holding on the heater shroud on the back left corner of the compartment next to the head.  Cannot get a socket or wrench on it.  I am certainly learning a lot for sure.  Vernon was giving me some tips on the upper head bolts, but for now the thing that bugs me is wasting a fresh oil change.  He refused to tell me how he got the bolt out.  Obviously, a rite of passage into corvair manhood!  I think once I get the seal off, I'll have access.  For now, no spoilers please as Vernon has challenged my Corvairhood....  "Vern, Vern, Vern, Vern, Vern, Vern, Vern," typed in my best Jim Varney accent.

I have been restoring and collecting games for about 20 years and have been turning my collection over from solid state to the older electro-mechanicals.  Happy to get some pizza for lunch as well.

Remove the top shroud and side shroud.  You are following the shop manual procedure, correct?
