[V8Vairs] New Car & Questions

Hi,
I just joined this list.  Many may know me from VV.  I just bought a 66 
Corsa with 66 Toronado power from a good friend.  I have known this car 
for a while and 
worked on it in the past.  He got another Vair, and decided to make space, 
so I could not pass up the opportunity. 
It is a finished car.    Very nice looking and runs well.   We rebuilt the 
transmission after  I burned it out a year ago while I was borrowing it. 
It is great in a straight line and as is known about toro vairs, not the 
best in corners.
I have plenty of other more practical vairs, so figured I could not miss 
my chance  for a complete V8.  Ideally at some point I would like to 
put a smaller lighter engine in it then the Big Olds 425.
Main thing I want to do is better exhaust.  What is has now is not very 
good.  It comes out of the manifold and makes a tight S back to some 
mufflers on each side.  The turn is so tight the pipe comes down to about 
1 inch cross 
section.  I would like to cross each one to the other side to eliminate 
sharp bends.  Any thoughts? Ideas?
The other problem it has is the Quadrajet is dumping out way to much fuel.
   Wondering if I should rebuild it ( I think it is stock) or go to a 
different carburetor.  Like a more modern one?  I know Vair carbs in and 
out, but very little about these carburetors.  What modern ones will 
work?  It is a completely stock 
425 Olds engine.

Fun stuff about the car:
It has SW gauges, Corsa Dash was replaced with a Monza dash and Sun tach
It has Front Disk Brakes and HEI ignition.  The radiator is mounted in 
front of the engine.  It has a 
nice enclosure.  It has a scoop under the car to feed the radiator, 
leaving the front stock.   Water temps stay at 180.  Oil temps at 190. 
The air intake panel below the back window was smoothed.  It also has 
Camaro wheels.
