<VV> Running Lean?

I just replaced the '65 carbs on my 140 daily driver with a set of '66 carbs
(and linkage) that I rebuilt.  The car runs "OK", but it is a little uneven on
moderate acceleration - not quite enough to call it a miss, but of similar
character.  I'm suspicious that the primaries are running a little lean.  I've
never been satisfied with my ability to "read" plugs to determine mixture, so
I'm looking for advice.  (No humble opinions, please.)

Primary Jets : .051's
Secondary Jets : .048's
Float Level : 1-1/8"
