I just used Dupli-Color Engine paint in semi gloss black, which is pretty
shiny, but I like it that way. The flat is probably closer to stock.

Prior to painting, I used Easy Off Oven Cleaner to prep the shroud. And you
have to get the original kind, the kind with the fumes and nasty warnings,
because the original has lye in it, which does the work on your shrouds. Not
only will it get the forty year old grease off, it will take the paint off
as well. After forty plus years being soaked in oil, the paint has to have
some in it, so best to take it all off.

A nice hot sunny day like today is a good time to use the Easy Off. Just put
the pieces out in the sun to heat up, spray 'em good with oven cleaner, wait
about 10-15 minutes, then rub on the parts, wearing rubber gloves, with
something somewhat abrasive (my gloves have a rough texture, which is what I
used), then rinse good with water. Repeat this process until you feel
comfortable that you have a clean surface to paint.
