As you say, Mikunis of practically any type are good, and very tunable.

I think 40 mm = 1.6 inches or so.

Also, to run a really big carb on a bike or car they almost have have a vacuum control to prevent prevent being too open, at too low rpm.  A CV type carb (SU, or modern Hitachi, Mikuni, Keihin) is what is found on sport bikes and even Harleys.
