First question is why ? Are they scored or otherwise damaged. If not, 
don't. If the crank is good have it miked and it may need nothing or 
polished .001 or .002 undersize. Bearings should be available.

One reason is to avoid removing all of the tuftriding (surface hardening 
which usually is only about .005" deep. Personally, I just do not like to 
turn a crank though I know it is done all of the time: would just rather 
replace than turn though do not know if that is an option any more.
