As it has already been mentioned, a car display on Saturday would most likely, be competing with another convention activity. Moving the concours/display to the last day of the convention poses several challenges.
 
The concours/car display is usually held the first day, when the cars are fresh. Many of these cars were prepared before leaving home and just touched up before the show. If the show was moved to the last day, many of these cars might not compete in the other events because they'll get dirty. 
 
Having the car show on the first day gives the folks that drove a long distance a day to unwind. That is of course unless they have to scrub the underside of their concours car. Many use this first day to wander around and find old friends and just soak in all the beautiful cars.
 
Another consideration would be the trophies. These are prepared during the week for presentation at the banquet. I'll bet every concours or display chairman will agree that it would be impossible to have the trophies ready in just a few hours.
 
I agree that having the show on a weekend would attract more of the "general public." So, how about starting the convention on Sunday? Have the car show on that day and then end the convention on Thursday.
