Steve, what hasn't been said yet is that modern day oils are not
designed for our flat tappet engines. So, don't just go get some
Pennzoil or castrol and put it in your engine.
They have lowered the amounts of zddp for over a decade to the point
that the flat tappet engines need more than what is in the oil.
Go read Richard Widman's oil article, just google his name and oil and
the PDF will come up.
In short, your engine was designed for a 30 wt oil back in the 50's, so
any 30 wt derivative will work. It has to do with building the correct
boundary layer of oil in the bearings.
Others use a 10W40, and in the synthetic field there are the 15w50 guys.

In the end, it seems any of them work, and it appears the abilities of
synthetic oil also make them compatible in higher weights.

Only a few oils still have enough zddp, the amsoil 10w40, the Mobil 1
15w50?, you will have to do some study, but start with Richards oil
article, then you can make an informed decision. zddp is paramount.
