"What would make front brakes on the 61 Monza pull left one time and right the next time when you apply the brakes?  If I apply the brakes slowly so the fluid has a chance to develop equal pressure it stops straight.  But if I just hit the brakes it jerks to one side or the other."

Bob - Matt has suggested something loose in the front suspension as the cause of the problem.  That's a possibility, but another distinct possibility, given "if I just hit the brakes it jerks to one side", is that one or both of the rear brakes have problems.  The fact that it stops straight in a slower stop leads me to that possibility.  I had the same type of problem with my '63 that I put into service after 10+ years of storage, and had to replace all of the rear brake parts (except springs) before I could get the car to stop straight.  I had a mix of worn shoes, leaky cylinders, and contaminated (sticky) shoes on the rear.  Since it's fairly easy to pull the rear drums to inspect, and adjust/repair if necessary, I would start there.
