I used to go to FoMoCo's "Tomadur" engine plant in Santa Fe Springs, CA all
the time. Chevy (!) had a contract with them to reman Vega engines and as a
Chevy dealer employee, I would go and pick up twenty or so every couple of
months. Tomadur would sleeve the cylinders and do the whole nine yards to 'em.
They seemed to do OK after their rework. The way that operation worked, they had
a regular engine line. Aside each station on the line were racks of parts,
ready to go. Each part, was either refurbished or new and not part of a
particular group or engine. Cranks were turned and cylinders were bored within
limits, and matching new pistons and bearings were selected from racks. I would
call that a "remanufactured" engine; the thing went down a repetitive engine
assembly line.

That operation is discinct from "rebuilt" or "overhauled" engines. I don't
know of any specific definition or those terms, nor do I think a definition
would amount to a hill of beans. IMHO, "rebuilt" and "overhauled" DO imply
repairing engines "one-by-one" and what a guy (or gal) definitely varies according
to the mechanic.
