With the engine out of the car as in no drivetrain weight to 
consider, two people can pick up the rear of the car if they're 
serious.  Most of the mass in the back end of a 'Vair is 
drivetrain.    The mass that those two people could pick up is what 
you'd be lifting if you jacked up the car by the differential.

All in all, it's the rear engine mount that takes the hit if you do 
this.   The two forward mounts don't much care either way, but the 
weight can cause trouble on the rear mount if it's old...  unless, 
again, it's a '60 mount.    ;)


By the way, if you fear rust issues in the std jack points under the 
car, just keep a chunk of 1.5" thick oak shelf board, about a foot 
square, on hand.   Put it between the jack and the bottom of the car 
in the general vicinity of the jack points...  no problems.

If the car still has floor-flexing issues even with the board, you 
have no business driving it in the first place until you fix it.
