Install it in the car and check it out for leaks etc.  With the  exception 
of the bell housing seal and some transmission seals you can do the  "O" 
rings and gaskets while the engine is installed.  I would recommend  that you 
install the engine, remove the top cover, clean out any debris clogging  the 
cylinder and cylinder head cooling fins and service the engine to get it  
running.  Then check it for leaks and replace what is necessary.   There is a 
better than 50/50 chance that the prior owner already replaced the  "O" 
rings with Viton ones already.  Just fix what needs to be fixed and  have fun 
with it.
