If you want it in a hurry, they'll "need money now" - Catch 22

Don't give them more than you're willing to lose (like lending money to a
friend or family) 

~ Give them too much and they don't have to work hard (do they use this ploy
to measure how deep your pockets are ?)

~ Give them too little and they "can't get parts" or something similar ?

Keep good notes (and check your state law that may or may not protect you ?)

Get it in writing and makes sure they're licensed ~ in CA, if they're not
licensed , they can't even defend themselves in court, but can you get your
money from them ?

Document the condition of the car before you sign it over, to prevent the
knee-jerk response of "it was that way when you brought it here" (like the
scorpion and the frog, it's an instinctual response ~ they can't NOT say
that~ it's automatic!)

Even if you take pictures, they'll claim you doctored the photos in
Photoshop (really !)

If the place burns down, that's another story, so make sure they have
insurance (or you do !)

A lot of work, and maybe pessimistic, but how much do you really love your
Corvair ?
