Thanks everyone for your input. Here's what I found:

1. The rivets on the VIN plate are round, not the six-sided GM rivets. I thought they looked funny. This also explains why there was no plate that shows all the options, color, etc. It's not there at all.

2. The hidden VIN does not match the VIN plate!

The VIN plate is: 105377W116096 = '67 Monza, Willow Run, 16,096th built. (Right?)

The hidden VIN (which is not the whole VIN, just the last 8 characters) is:  6L100739 = '66, Los Angeles, 739th car built, right?

So, it's a '66 that someone put a '67 VIN tag on. I don't know why, but that's what they did.
