Pretty comprehensive from Ray.

I would add, lay a rag over the "hell hole" down by the balancer and plug 
the holes in the top of the manifolds when the carbs are removed - this to 
prevent little screws and bolts from going where they should not be.

Also, if the head has not been previously "deflashed" this is the time to 
open up those air passages for a cooler running engine.  This could add an 
hour or so (maybe two?) to the job, but will be worth the effort in terms of 
engine longevity.
